Marinated Flank Steak

Ingredients:

  • 1.5 lbs flank steak
  • chopped fresh chives, green onion

Marinade

  • 3 Medjool dates
  • 2 tbsp water
  • ⅓ cup coconut aminos or soy sauce
  • 1 tbsp spicy brown mustard
  • 1 tbsp apple cider vinegar
  • 2 garlic cloves
  • ¼ tsp onion powder
  • ¼ tsp smoked paprika
  • black pepper or crushed red pepper flakes
  • ¼ tsp sea salt
  • ¼ cup olive oil

Directions:

  1. Pit dates and soak in hot water to soften.
  2. Combine all marinade ingredients in blender except olive oil.
  3. Add olive oil with the blender running on low.
  4. Score the steak.
  5. Marinate steak for at least 2 hours or overnight.
  6. Grill steak.
  7. Let meat rest for 5-10 minutes before slicing.

Marinade Sauce:

  1. Boil remaining marinade for 5-10 minutes.
  2. Add coconut aminos and a few drops of hot sauce and serve with steak.
  3. Serve steak and sauce with vegetables, salad, sweet potato fries.
